In the US, people like to have BBQ parties all the time. In Pakistan as well, special arrangements are made to cook BBQ for Eid. This is a commonality that we as citizens of earth share 🙂 Specially in summers, bbq equipment and tools are sold on special promotions and deals.
Keeping the tradition alive, we also got our b-b-q grill this season as Father’s Day gift to Ali. Here is our first recipe that we prepared 🙂
Preparation/Marination time: 6hrs to overnight
Cooking time: 30m
Serving: 2-4 persons
Recipe:
- Mutton chops – 7 to 8
- Fried onion – 1
- Ginger garlic paste – 1 tablespoon
- Mustard oil – 3 tablespoons
- Yogurt – 2tbsp
- Salt – 1 teaspoon
- Red chili powder – 1 teaspoon
- Chat masala – 1 teaspoon
- Garam masala powder – 1 teaspoon
- Cumin – 1 teaspoon, roasted and grounded
- Coriander seeds – 1 teaspoon, roasted and grounded
- Lemon juice – 1
- Papaya – 3 – 4 tablespoons, pureed
Method:
- Fry onions until golden brown and dry them on a kitchen paper towel.
- In a bowl, mix yogurt with fried onion and all spices expect papaya paste.
- Add the prepared marinade in meat and mix it well.
- Allow it to rest in fridge for at least 6 hours before cooking, for best results overnight 🙂 [ added the papaya paste 2 hrs before cooking into the meat, if added for a longer time the meat will get dry when it cooks].
- On a pre heated charcoal grill b-b-q for 20 – 25 mins or until well done.
